Hazelnut pistachio is mostly produced in Kerman province and in Sirjan and Rafsanjan cities, but in some different regions of the country This type of pistachio is also found. Also, this pistachio is placed in the ROUND category in terms of size and has the smallest size among pistachios. The harvest of this pistachio also starts from 28 and continues until 30 to 32.
The storage period of dry pistachios (with 5% moisture) at 20 degrees Celsius and 70-65% humidity reaches 1 year. Keeping pistachios in a high concentration of carbon dioxide and oxygen less than 0.5% and low temperature (from 0 to 10 degrees Celsius) makes pistachios stable and preserve their taste.
Pistachios are not sensitive to cold and can be kept at temperatures below freezing. The use of nitrogen gas in pistachio storage warehouses before packing is to increase pistachio storage time.
