DESCRIPTION

Hazelnut pistachio is mostly produced in Kerman province and in Sirjan and Rafsanjan cities, but in some different regions of the country This type of pistachio is also found. Kerman fandoghi pistachios are the first in terms of quality in Iran and the world. The distinctive feature of Kerman pistachio is mostly related to the geographical location of this province and the distance and height from the sea level, which makes Kerman pistachio have a different taste from other pistachios and has a worldwide reputation.

The color of the shell of this type of pistachio is creamy and the kernel is green and the skin on the kernel is purple.

Also, this pistachio is placed in the ROUND category in terms of size and has the smallest size among pistachios. The harvest of this pistachio also starts from 28 and continues until 30 to 32.

The storage period of dry pistachios (with 5% moisture) at 20 degrees Celsius and 70-65% humidity reaches 1 year. Keeping pistachios in a high concentration of carbon dioxide and oxygen less than 0.5% and low temperature (from 0 to 10 degrees Celsius) makes pistachios stable and preserve their taste.

Pistachios are not sensitive to cold and can be kept at temperatures below freezing. The use of nitrogen gas in pistachio storage warehouses before packing is to increase pistachio storage time. Low water in dry pistachio and its storage method neutralizes the metabolic activity and slows down the pistachio respiration rate.

The harvesting season of this type of pistachio is usually mid-August to late September and sometimes continues until early October.
