DESCRIPTION

KALLEH Ghochi pistachio is one of the most famous types of pistachios in Iran. The big round kernel and its good taste have caused the spread and popularity of the ram’s head pistachio all over the world.

Like other pistachios, this product is mainly grown in Kerman, but this type of pistachio can also be found in other provinces such as Khorasan.

The skin color of this pistachio is dull and the color of the skin on its kernel is purple or dark red.

The ram head pistachio has a spherical and large appearance and it can be said that it is the largest type of pistachio. This pistachio is placed in the jumbo size category and is available from 20 to 26 ounces, although 18-20 ounces of this pistachio is rarely found.

The storage period of dry pistachios (with 5% moisture) at 20 degrees Celsius and 70-65% humidity reaches 1 year. Keeping pistachios in a high concentration of carbon dioxide and oxygen less than 0.5% and low temperature (from 0 to 10 degrees Celsius) makes pistachios stable and preserve their taste.

Pistachios are not sensitive to cold and can be kept at temperatures below freezing. The use of nitrogen gas in pistachio storage warehouses before packing is to increase pistachio storage time. Low water in dry pistachio and its storage method neutralizes the metabolic activity and slows down the pistachio respiration rate.
